Baked Chicken


Line a pan with lots of tin foil--enough to go underneath and cover the chicken.

4 Chicken Breasts, cut in half (more surface for breading!)

Whisk 2 eggs in a bowl, add a drizzle of milk, & set aside.

Pour 1-2 cups of bread crumbs into a bowl or bag (Progresso Italian Style is my fave)

Dip chicken in egg mixture, then cover with crumbs, then egg again, then crumbs again! 

Lay all the chicken in the pan, and *this is the secret for moist chicken* put 1tsp-1TBSP (depending on how big your pieces are) of margarine on each piece. Just a little chunk, it will melt down onto the chicken and bread crumbs while it cooks! Mmm mmm!!

Bake at 350 for 45-60 minutes depends on how thick your chicken is, you just have to check it.  Take the foil off for 5-10 minutes at the end if you want to crisp up the breading.

Sweet Baked Beans


3 cans Baked Beans (about 30 oz total) *You can use any brand because we're going to spice it up, I've used Western Family, Van Camps Pork & Beans, or Bushs.
1 TBSP BBQ Sauce
1/3 c Brown Sugar
1 tsp Mustard (any flavor)
1 small Green Pepper
1 small Onion
4 slices Bacon (sliced into small pieces)
1 tsp Baking Soda

Fry bacon until almost done, then add onion and green pepper. Cook until onions are clear. Mix everything together in a casserole dish. Cook at 350 for 1 hour. (I covered it with tin foil for about half the cooking time, but I don't know if that's required)

Green Beans with Almonds


Cook Green Beans (I used a Birdseye Steamfresh package, microwaved for 5 minutes)

Meanwhile, fry a few tablespoons of Sliced Almonds in 1 TBSP Butter until just browned. Set aside.

Add 1 TBSP Butter to the pan and brown the green beans just a bit. Salt & Pepper.

Toss together!
